Ingredients
The recipe is based on the preparation of four servings.
We will need 900 grams of parsnips, 50 grams of butter, one onion (chopped), 2 cloves of crushed garlic.
You will also need two teaspoons of cumin, one teaspoon of ground coriander, and 1.2 liters of hot chicken broth.
You will also need low-fat cream (150 grams), salt and ground black pepper to taste, chives and croutons (for serving).
Preparation
As for preparation, first we peel and cut the parsnips into thin strips.
Next, heat the butter in a large saucepan, add the onion, garlic and parsnips.
Stir. Cook until the onion is soft, but do not allow it to change color.
Then sprinkle the vegetables with cumin and coriander, continue stirring (for about 1-2 minutes).
After this, add the broth and bring to a boil.
Next step: cover the pan with a lid and continue cooking over medium heat for 20 minutes until the parsnips are softened.
Let's start the pureeing process - in a blender or food processor, in small portions.
Add salt and pepper (to taste), cream and heat the soup over low heat, but do not bring to a boil.
