Cabbage can become the queen of the table, if, of course, it is prepared correctly.

Sometimes even experienced cooks get lost trying to determine how many minutes it takes for a vegetable to become soft but not turn into mush.

A mistake in calculations can ruin the texture of the dish, make the cabbage rolls torn, and the soup tasteless.

For soups, cabbage soup or stewed side dishes that use shredded cabbage, 15–20 minutes of cooking is enough.

If the vegetable is to be the basis for a cream soup, the time is increased to 20–25 minutes. This allows you to achieve the desired consistency for subsequent grinding.

Classic cabbage rolls require a different approach.

The whole head of cabbage is dipped into boiling water for 5 minutes, after which the softened leaves are carefully removed.

The remaining portion is boiled again for 3 minutes, repeating the process until the head of cabbage is completely processed.

This method prevents the top layers from being digested and preserves the integrity of the leaves.

An important nuance is the age of the vegetable. Young cabbage cooks twice as fast as mature cabbage.

For example, for summer cabbage rolls, the leaves are separated after 2-3 minutes of boiling. Winter varieties are tougher, so they require more time and attention.

Knowing these rules, it is easy to avoid common mistakes: porridge instead of filling, raw core of the cabbage, or loss of bright taste.

The cabbage will remain firm but tender, highlighting the merits of any dish.
