Sauerkraut cannot be stored indefinitely and sooner or later the healthy preparation may spoil.
Anticipating the inevitable, housewives prepare cabbage soup – a hearty and healthy dish for the whole family.
Expert of the online publication "BelNovosti" Yulia Arkhipova - a cook, fourth-category baker told how to cook cabbage soup from sauerkraut.

You will need:
- meat on the bone (beef) 600-700 g;
- cabbage (sauerkraut) 600 gr;
- potatoes 500 g;
- onion (bulb) 1-2 pcs;
- carrot 1 pc;
- tomato paste 2 tbsp. l;
- vegetable oil 6-7 tbsp;
- water 3-3.5 l;
- bay leaf 2 pcs;
- salt, pepper, fresh herbs to taste.
How to cook
1. Prepare the broth. To do this, cook the meat for 1-1.5 hours after boiling with salt, pepper and bay leaf. Then remove the meat from the bone and put it in its broth.
2. Fry the cabbage in a frying pan with vegetable oil. When it becomes soft, add finely chopped onion and grated carrot.
3. When the vegetables are golden, add the tomato paste.
4. Peel the potatoes, cut into large cubes, place in the broth and cook for 20 minutes.
5. Then add the fried ingredients and cook for a few minutes.
Add salt, spices and herbs, bring to a boil, turn off the heat and let stand for half an hour.
Shchi is served with sour cream. Enjoy your meal!
