Sprouted potato tubers do not pose any particular health hazard, with one exception.
If the potatoes have not turned green, but have only sprouted, then they can be eaten.
But in terms of the content of useful substances it will be noticeably inferior.
Mainly, there is less vitamin C.
But you need to be careful with green sprouted potatoes.
Green tubers contain more solanine, which is toxic to humans in large quantities.
Usually such vegetables are thrown away, but you can also cut off the green area, as long as you have some extra.
You should also avoid eating tubers that have become soft.
Length of sprouts
It is believed that sprouted potatoes can only be eaten if the sprouts are no longer than 1-2 centimeters.
If the shoots are more than 2 cm, this means that there are practically no useful substances left in them, only starch.
That is, almost everyone takes young shoots.
